Monday night, I was scrolling through my AllRecipies.com app to find a recipe for jerk chicken. Every recipe I saw called for about 10 different spices and seasonings to create the marinade. Because I am on a budget, I decided to forgo all the intricate recipes and settle on using the Kroger brand jerk marinade I'd already had on deck.
After looking over a number of the recipes and their ingredients, I decided to season the chicken with black pepper, thyme, nutmeg, and onion powder- all things I already had at home. I placed the chicken in a ziplock bag, covered it with marinade, gave it a good shake, and placed it in the refrigerator for about an hour.
Directions:
Preheat the oven to 350 degrees. Coat a baking pan with extra virgin olive oil. Place the chicken in the pan, uncovered, skin side up, and bake for 45 minutes to an hour or until done. Depending on the cut you use, cooking time may be more or less. For crispier skin, drain the remaining marinade from the pan, increase the temp, and place back in the oven for about 5-10 minutes or until you have reached your desired crispiness.
